In Canada, it’s hard sometimes to get 36 million people to agree on anything. Take the August Civic Holiday, a day that is known by a different name depending on where you are in the country. If you live in British Columbia you call it BC Day, if you’re from Toronto it is Simcoe Day and if you’re from Quebec it’s simply known as Monday!

Regardless of what the first Monday of August is called where you live – or if you even get the day off – as we reach the halfway point of the season, Coca-Cola hopes you’re having a fantastic summer. If you haven’t had a chance to get out to a cottage, cabin or enjoy some good old-fashioned camping– what are you waiting for? Eggy Banana Pancakes

Serves 1

Ingredients Quantity

banana (ripe)

  • Mash ripe banana with fork, add in and whisk eggs
  • Spray a non-stick or cast iron pan with cooking oil and warm to medium
  • Spoon out batter to make silver dollar sized pancakes, cook for 30 seconds on each side and serve
  • Enjoy with Simply Orange® juice

  • Place scooped avocado into a blender or food processor; blend until smooth and creamy — then place into bowl
  • Chop tomato, onion, jalapeno and cilantro into small pieces
  • Cut lime in half and squeeze juice into avocado mixture
  • Stir in chopped vegetables and herbs until thoroughly combined
  • Garnish with a sprig of cilantro and enjoy with Gold PeakTM Lemon Tea and veggies or tortilla chips

Salmon Aluminum Foil Packs

Mayonnaise

Tomato or Basil pesto

Salmon fillet

  • Preheat oven to 375⁰ F or build campfire
  • Mix together mayonnaise and pesto
  • Lay out a large piece of aluminum foil, spread a layer of the mayonnaise and pesto mixture roughly as large as the salmon fillet
  • Place salmon fillet on bed of mayonnaise and pesto and coat the fillet with the remainder of the mixture
  • Fold the aluminum foil in half and then fold in the edges to seal in the salmon fillet
  • Place packet in oven and cook for 20 to 25 minutes
  • If cooking with a campfire, place packet on grill or at base of fire and cook for 20 minutes turning over halfway through (NOTE: Salmon is safe to eat when fish is solid pink throughout and flakes apart at the centre if poked with a fork)
  • Enjoy with smartwater® sparkling
