Coca-Cola Star Cookies

For cookies

Ingredients Quantities
Honey 7 fluid oz
Sugar 1/2 cup
Butter 1/2 cup
Coca-Cola 3 tbsp
Flour 2 1/2 cups
Whole grain rolled oats 8 tbsp
Baking powder 3 tsp
Cinnamon 3 tsp
Cocoa 3 tbsp
  • Stirring often, melt honey, sugar and butter slowly in a small saucepan, then let the mixture cool 
  • Stir in Coca-Cola 
  • Mix flour with oatmeal, baking powder, cinnamon and cocoa and combine everything to a smooth dough·
  • Leave dough in freezer for 30 minutes to chill, preheat oven to 350⁰ F
  • Roll out onto a floured surface, cut out star shapes and place on a baking tray lined with parchment paper
  • Bake in oven for approximately 13 minutes, allow to cool

For icing

Ingredients Quantities
Powdered sugar 1 1/2 cups
Cinnamon 1 tsp
Coca-Cola 3 tbsp
  • Stir powdered sugar and cinnamon with Coca-Cola until smooth
  • Use a spoon to drizzle icing in a zigzag over the stars, then sprinkle with sugar pearls

Hanukkah Latkes and Coca-Cola Applesauce

For applesauce

Ingredients Quantities
Apples, peeled, cored and quartered (gala or fuji work best) 10
Water 1 cup
Cinnamon 1 tsp
Brown sugar 1 cup
Coca-Cola 1 cup 
  • Combine apples and water in a slow cooker, cover and cook on low for 5 to 6 hours 
  • Add cinnamon, brown sugar and Coca-Cola, stir to blend and cook an additional hour 
  • Mash lightly and cool before serving

For latkes

Ingredients Quantities
Potatoes, peeled 4
Onion, chopped 1 cup
Eggs 2
Kosher salt 2 tsp
Flour 2 tbsp
Baking powder 1 tsp
Canola oil 1 cup 
  • Grate the peeled potatoes on the large side of a metal grater 
  • Mix the potatoes, onion and eggs together until well combined 
  • Mix the salt, flour and baking powder in a bowl and add to the potato mixture, combining all ingredients by hand or with a large wooden spoon 
  • Heat canola oil in a skillet over medium heat 
  • Use ¼ cup of potato mixture per latke, and place into the hot oil 
  • With the back of a spatula, press down to make a patty, fry the patty until brown on the bottom then flip and cook until other side is golden brown (roughly 2-3 minutes per side) 
  • Repeat with the rest of the potato mixture, replenishing oil as needed 
  • Serve hot with Coca-Cola applesauce
